Bacon and Wild Mushroom Risotto with Baby Spincah

If you haven't put 2 and 2 together, Edwin and I are big fans of risotto. So much so, that we (at least Chelsea- I haven't consulted this offer with Edwin) will MAKE YOU RISOTTO to prove how amazing it is. I haven't had a bad risotto yet. (Come to think of it, I like most food I eat....) The following risotto is maybe the best ever. MMM my mouth is watering just thinking about it. Edwin and I made it several weeks ago and I'm making a second batch tomorrow for a potluck with the girls in my apartment complex.

Bacon and Wild Mushroom Risotto with Baby Spinach

Yield: 5 servings (serving size: about 1 1/4 cups risotto and about 1 tablespoon bacon)

Ingredients

  • 4 cups Homemade Chicken Stock
  • 6 bacon slices, chopped
  • 1 cup chopped shallots
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon chopped fresh thyme
  • 4 garlic cloves, minced
  • 4 ounces cremini mushrooms, sliced
  • 4 ounces shiitake mushrooms, stemmed and sliced
  • 4 ounces oyster mushrooms, sliced
  • 1 cup uncooked Carnaroli or Arborio rice or other medium-grain rice
  • 1/3 cup Madeira wine or dry sherry
  • 4 cups baby spinach
  • 1/2 cup (2 ounces) grated fresh Asiago cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Preparation

1. Bring Homemade Chicken Stock to a simmer in a small saucepan (do not boil); keep warm over low heat.

2. Heat a large Dutch oven over medium heat. Add bacon to pan; cook 8 minutes or until crisp, stirring occasionally. Remove bacon from pan with a slotted spoon. Add shallots, oil, thyme, and garlic to drippings in pan; cook 6 minutes or until shallots are tender, stirring occasionally. Stir in mushrooms; cook 8 minutes, stirring occasionally. Add rice, and cook 1 minute, stirring constantly. Stir in Madeira; cook 1 minute or until the liquid is nearly absorbed, stirring constantly. Stir in 1 cup stock; cook 4 minutes or until the liquid is nearly absorbed, stirring constantly. Add remaining stock, 1/2 cup at a time, stirring constantly until each portion of stock is absorbed before adding the next (about 25 minutes total). Stir in spinach; cook 1 minute. Remove from heat; stir in cheese, salt, and pepper. Sprinkle with bacon.

Bust a Move!

Edwin and I had a BIG night last night. It was the IDEA Staff Christmas party!! I almost went solo because on Friday Edwin was out of school with Influenza B. We didn't think he was going to make it- but he is a trooper and rallied!! The Dr. had told him he could be "released into the world" when he had gone 24 hours without a fever. Well.... the start of the party was exactly 24 hours after his fever, and he was feeling good, so he put on his dancing shoes, took some meds, and came along.

Every year IDEA has "Academy Awards"- you might remember that last year Edwin and I were both nominated for "Most Likely To Be Confused For A Student". This year we were nominated for "Best Couple"!! Naturally, we won :) We got a little statuette and a Hollywood star with our names on it. We are going to frame it. It's that sweet.

After the awards was the dance competition!!! Let me just say, there was no competition. The Elementary staff BLEW the high school act out of the water. HERE is the link- ENJOY!!!! Dance Moves

Edwin and I have been super busy lately. Edwin with work, and me with grad school apps. BUT somehow we became involved in a campus-wide dance competition. We have a staff Christmas party on Saturday and the Elementary school challenged the Middle and H.S. staff's to a dance-off. Well, the elementary school is doing 3 small numbers and a whole group number. Edwin got pegged to choreograph and teach "Telephone" (by Lady Gaga) and I am doing the same for "Jai Ho" (from Slumdog Millionaire). Edwin made up his dance last night (I have yet to see it), and I am teaching the Jai Ho dance (which I have yet to come up with) to the entire staff on Thursday. Hmm. I will try to get video for your enjoyment!!!!
